VINEYARD Pamid is on of the oldest varieties that are grown in Bulgaria. It is grown in more than 40 years old vineyards near Nova Zagora. The main part of the grapes (Cabernet Sauvignon, Merlot) is from vineyards in Suhindol that we rented and we are cultivating now. Rubin is from old vineyards in the land of Kuklen.
VINIFICATION the way of making this wine is a new reading of the traditional method of using the Pamid variety for fermentation with other more powerful varieties. The berries of the Cabernet Sauvignon and Cabernet Franc varieties were first destemed and crushed, and most of the juice was immediately drained. Highly concentrated skins begin slow fermentation, after which Pamid grapes are added. In this way, the wine takes on the powerful tannins and color of Cabernet and the fruity character of Pamid. Fermentation lasts about 20 days in a wooden vat. Rubin and Merlot ferment separately and are added during the blending. The finished blend matures for 6 months in a oak vat, and about 20% of the wine is aged for 12 months in barrels.
