VINEYARDS We have selected several plots, in the villages Nauchene and Kamenovo (Nova Zagora district). Vineyards are more than 30-40 years old, with a planting density of 2800-3300 vines per hectare. The harvest for both was on the same date – 17 September 2019.
VINIFICATION For Assemblage we used both the free-run juice and the press juice. The free-run juice is drained after few hours maceration but the skins are pressed two days later in order to macerate longer. After separate cold settling down for free-run and press juice, we mix them to ferment together. Fermentation took place in stainless steel vessel at 15-18 ° C. After the end of the alcoholic fermentation, the wine is clarified and stabilized in the cold.
