VINEYARDS The Pinot Noir vineyards are located in the village of Dragoevo, Veliki Preslav municipality. The Rubin and Merlot grapes are sourced from the region of Veliko Tarnovo.
VINIFICATION The Pinot Noir harvest was end of August 2023. The grapes were whole bunch
pressed. The must was clarified by cold settling, followed by fermentation at a low temperature of 13-14°C. The wine was clarificatied and stabilizatied traditionally. It was then blended with rosé from Rubin and Merlot for greater complexity.
