VINEYARDS Selection of two patches – one in the region of Brestovitsa (Plovdiv) and from the village of Tserova koriya (Veliko Tarnovo).
VINIFICATION Strict grain selection and maceration for 18-20 days in small pots with hand-dipping the hat. The wine is drained directly into barrels (new, French oak and used, Bulgarian oak). Maturing in a barrel is 12 months, with stabilization and cleansing being done naturally without brighteners and filtration. The wine is coupled and bottled in October 2012. The batch is 325 liters or 464 bottles.
