COMPOSITION Cabernet Sauvignon 30%, Cabernet Franc 20%, Pinot noir 37%, Rubin 13%
VINEYARDS Cabernet Sauvignon from 25 years old parcel on a plateau over the city of Suhindol, that we cultivate since last year. Cabernet Franc is from vineyards in Gorski Dolen Trambesh village (G. Oryahovitsa municipality). Vineyards have a planting density of about 4500 vines per hectare, with a Cordon Royat trellis system. The vineyard of Cabernet franc is certified for organic farming. The Rubin is from village of Belashtitsa near Plovdiv. The Pinot noir from the village of Dragoevo near Preslav.
VINIFICATION The Cabernet Sauvignon and the Cabernet Franc grapes are harvested the same day. The two varieties are crushed together, and the must is drained out shortly afterwards. The fermentation takes place at a low temperature of 13-14 ° C. The wine is clarified statically. It is then blended with Rubin and Pinot noir rosés for greater complexity.
