COMPOSITION Chardonnay 95%, Dimyat 5%
VINEYARDS from two vineyards in the Danubian plain region of Northern Bulgaria. First is in the region of Suhindol – on a high plato with Calcic Luvisols on top of an Urgonian limestone. This parcel is about 30 years old and the density of plantation is about 2800 vines per hectare. The other near the town of Veliki Preslav with about 4500 vines per hectare. The plot is located on the slope of Preslav Mountain, near the nature reserve “Dervisha”.
VINIFICATION The grape harvest is at the end of August. The pressing is of a whole bunch for a more gentle extraction. The fermentation takes place at 16-18 ° C in a stainless steel vessel, and part of the wine is fermented in a 600-liter barrel of Bulgarian oak. After fermentation the wine was kept on lees for more than 6 months. The wine has undergone malolactic fermentation.
