Description

Varietal Composition: 100% Dimyat

Vineyards: Old vineyards in the region of the village of Dragevo, municipality of Veliki Preslav.

Vinification: Part of the grapes was pressed with whole clusters, while another part was crushed and underwent some maceration with the skins. Fermentation occurred at 16-18°C in a stainless steel vessel, and part of the wine fermented in a 600-liter Bulgarian oak barrel. After fermentation, the wine was left on the fine lees with batonnage for 6 months. The wine has undergone malolactic fermentation.

Alcohol: 12.9% vol.

pH: 3.28

Titratable Acidity: 5.5 g/L

This Dimyat wine from the Golden Hands series represents a careful and skillful approach to winemaking, emphasizing the unique qualities of the Dimyat grape, which is native to Bulgaria. The combination of old vines, partial oak fermentation, and extended lees contact adds complexity and texture to the wine, making it a distinguished example of what the Dimyat varietal can offer.
