Description

COMPOSITION Pinot noir 100%

VINEYARDS from the village of Tserova koriya (Veliko Tarnovo municipality), located on the southern slope of the “Straja” ridge. The formation is a double cordon “Roayat” and a planting density of about 4,500 vines per hectare. The grape harvest was on August 27, 2011.

VINIFICATION The whole grapes are directly pressed with a hand press so that the juice can quickly drain-out and have no time to absorb the color of the skins. Fermentation is in 225 liter barrels. Natural cold stabilization follows at the lowest winter temperatures. The bottles were filled in May 2012. In small batches we make the riddling with a small gyro-pallet. The disgorging is done manually.
