VINIFICATION The harvest is at the beginning of September. Must is shortly drained from the skin, with the use of dry ice being used to prevent oxidation. The fermentation takes place at 16-18 ° C in a stainless steel vessel and part of the wine is fermented in a 600-liter Bulgarian oak barrel. After fermentation, retention on fine lees and batonage for 2 months.
