COMPOSITION Cabernet Sauvignon 66%, Cabernet Franc 34%
VINEYARD Cabernet Sauvignon from the region of the village of Ilindentsi from the slopes of Pirin above Struma, the grape harvest was on October 7, with excellent ripeness of the fruit. Cabernet Franc is from vineyards in the village of Gorski Dolen Trambesh (municipality of Oryahovitsa). The vines have a planting density of 4500 vines per hectare, with a medium-stemmed royal cord. The grape harvest was on September 20, 2013.
VINIFICATIONS Strict grain selection and maceration for 18-20 days in small pots with hand-dipping the hat. Upon completion of the fermentation of each batch of the two varieties, the wine is drained directly into the barrels. For this limited series, two barrels are used, one of which is Radoux’s exclusive X-Blend. Three months before the end of the 16-month maturity, the two barrels were exchanged, so the whole quantity was marked by the flawless X-blend. Stabilization and scrubbing are done naturally without brighteners and filtration. The wine is coupled and bottled July 2015. The batch is 450 liters or 600 bottles.
CONSUMPTION The wine matures in a bottle in a lying condition at a temperature of 10-15 degrees for more than 3 years. Possible noble sludge. Therefore, as well as to maximize the aromatic potential, we strongly recommend to decant the wine before consumption.
