COMPOSITION Pinot noir 100%
VINEYARDS from the village of Tserova koriya (Veliko Tarnovo municipality), located on the southern slope of the “Straja” ridge. The formation is a double cordon “Roayat” and a planting density of about 4,500 vines per hectare. The grape harvest was end of August, 2009.
VINIFICATION Direct pressing of whole clusters in a bunker-press. Fermentation in stainless steel vats, followed by a natural clarification with low winter temperatures. The bottles were filled in 2011. In batches of 50-100 bottles we make the riddling with a small gyro-pallet and the disgorging is done manually.
CATEGORY: Natural sparkling wine by traditional method (secondary fermentation in a bottle), brut (sugar content about 5 g / l)
ALCOHOL 12.5% vol.
COLOR Sparkling of old gold.
EFFERVESCENCE Small bubbles, dense foam and long effervescence.
NOSE Ripe bouquet with yellow apple, raisins, dry herbs and brioche.
TASTE Full-bodied and meadow palette with hints of caramel, apple and honey. Traditional taste with nice sweetness on the finish.
FOOD COMBINATION: Apart from an aperitif, the wine will blend perfectly with foie gras, stew or roasted poultry (turkey, duck, quail) with sauce and also some desserts as fruit cake, tarte tatin, creme brulée.
