GRAPE COMPOSITION Merlot 50%, Cabernet Sauvignon 20%, Cabernet Franc, 17%, Rubin 13%
VINEYARDS Merlot and Cabernet Sauvignon from 25 years old parcel on a plateau over the city of Suhindol, that we cultivate since last year. Cabernet Franc is from vineyards in Gorski Dolen Trambesh village (G. Oryahovitsa municipality). Vineyards have a planting density of about 4500 vines per hectare, with a medium-stranded royal cord formation. The farm is in a transition to organic farming. The Rubin is from village of Belashtitsa near Plovdiv.
VINIFICATION The Merlot and the Cabernet Franc grapes are one day . The two varieties are crushed together, and the must is drained out immediately afterwards. The fermentation takes place at a low temperature of 13-14 ° C. The wine is clarified and stabilized statically. It is then coupled with Rubin and Cabernet Sauvignon rosés for greater complexity.
