COMPOSITION Rubin 100% – an indigenous Bulgarian variety, that is crossing of Syrah and Nebbiolo.
VINEYARDS Two parcels of Rubin on the Rhodope collar near Plovdiv: one with old vines (over 30 years old) and one recently planted. First is near the small town of Kuklen with density of planting – 2800-3000 vines per hectare and high vine’s training. The other is around 4500 vines per hectare, double cordon trained. Both are spur pruned.
VINIFICATION Manual harvest in small crates. Destemming and crushing after bunch selection and maceration for 18-20 days in a wooden vat from Bulgarian oak. Aging in barrels for 12 months (French, Bulgarian and American oak). Natural clarification and stabilization before a gentle filtration. The wine is blended in January 2020 and bottled in April 2020. The batch is 1450 liters – 2000 bottles.

COLOR Very dense ruby-red.
NOSE The nose is typical for the variety with dominating hints of black berries – blueberry, aronia, black cherry, also notes of cappuccino, black pepper, and vanilla.
TASTE Elegant and dynamic. The body is flexible with plenty of sweetness and grainy tannins. A long finish with accents of oak, smoke and black fruit.
