COMPOSITION Sauvignon Blanc 95%, Dimiat 5%
VINEYARD Most of the Sauvignon blanc is from a 25 years old parcel situated on a high plateau near the city of Suhindol. There is some Sauvignon from Veliki Preslav municipality with a double cordon Royat and a planting density of 4500 vines per hectare. The Dimiat is from the village of Dragoevo (Veliki Preslav municipality).
VINIFICATION After careful selection, the grapes are destemed, crushed and loaded into a stainless steel vat with some dry ice (to prevent the oxydation) for a short maceration. After draining, the juice is cold settled down and racked in to the fermentation vat. Fermentation takes place at 14-16 ° C in a stainless steel vessel.

TASTE Fresh and dense with a light and elegant body. The taste aroma is ethereal and dynamic with shades of black currant, herbs, passion fruit. The finish is deliciously sweet.
COMBINATION WITH FOOD: It is suitable for an aperitif and combines well with unleavened appetizers, fresh cheeses, grilled fish, seafood, chicken.
